  • 1 cup chopped red bell pepper

  • Salt and pepper to taste

  • 1 slice whole grain bread
  • ripe avocado
  • Everything bagel seasoning (or alternatives)
  • 1/2 cup sliced strawberries
  • 1/2 cup blueberries

  2. In a non-stick skillet, sauté zucchini, onion, and bell pepper in olive oil for 3-4 minutes until softened.
  3. Whisk eggs with salt and pepper in a mixing bowl.
  4. Pour egg mixture over vegetables in the skillet; sprinkle cheese on top.
