  • 600 g baby potatoes
  • 450 g chicken breast
  • 200 g mushrooms
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 1 tsp dried Italian herbs
  • 1 tsp paprika
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 200C (400F).
  2. Toss halved baby potatoes with olive oil, garlic powder, oregano, salt, and pepper in a mixing bowl. Spread on a baking sheet and roast for 20-25 minutes until golden brown.
  3. Heat olive oil in a skillet over medium-high heat. Add cubed chicken breast seasoned with salt, pepper, paprika, and Italian herbs. Cook until golden brown.
  4. Stir in minced garlic, sliced mushrooms, and diced red bell pepper into the skillet with the chicken; cook for an additional 5-6 minutes until vegetables are tender.
  5. Serve hot and garnish with fresh parsley.
