  • 1 large chicken breast (about 800 g)
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Juice of lemon
  • 600 g baby potatoes (red & yellow mix)
  • Salt & pepper
  • 1 cup chicken broth
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Rub the chicken with olive oil, minced garlic, parsley, thyme, rosemary, lemon juice, salt, and pepper.
  3. Toss baby potatoes with olive oil, salt, and pepper until well coated.
  4. Place the chicken in a baking dish and arrange the potatoes around it.
  5. Roast for 40-45 minutes until the chicken is golden brown and reaches an internal temperature of 75°C (165°F).
  6. For the pan sauce, deglaze the baking dish with chicken broth and stir in butter.
  7. Serve sliced chicken drizzled with sauce alongside the roasted potatoes.
