  • 2 pounds Yukon Gold potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried dill or 1 tablespoon fresh dill
  • 1 ½ teaspoons sea salt
  • ½ teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded
  • ½ teaspoon smoked paprika (optional)
  • Fresh chives or green onions, for garnish

Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add diced onions and cook until translucent, about 5 minutes. Stir in minced garlic for 1-2 minutes until fragrant.
  3. Add flour to create a roux, cooking for 1-2 minutes.
  4. Gradually stir in broth and add diced potatoes along with thyme, dill, salt, pepper, and smoked paprika if desired.
  5. Bring to a boil; reduce heat and simmer uncovered for 20-25 minutes until potatoes are tender.
  6. Blend partially for desired texture using an immersion blender or stand blender.
  7. Stir in almond milk and shredded cheddar cheese until melted; simmer for another 5 minutes.
  8. Adjust seasoning if needed before serving garnished with fresh chives.
