  • 18 ounces green enchilada sauce
  • 3 cups cooked chicken, cubed
  • 8 ounces cream cheese
  • 4 ounces canned green chilis
  • 3 cups shredded cheddar cheese
  • 8 large flour tortillas
  • Optional toppings: sour cream, salsa, chopped tomatoes, sliced avocado

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly spray a 9" x 13" baking dish with cooking spray and spread about 1 cup of enchilada sauce at the bottom.
  2. In a mixing bowl, combine cooked chicken, cream cheese, green chilis, and 2 cups of cheddar cheese. Mix until well combined.
  3. Fill each tortilla with about ½ cup of the chicken mixture, roll tightly, and place seam side down in the baking dish.
  4. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheddar cheese.
  5. Bake uncovered for about 30 minutes or until the cheese is golden brown.
