  • 1½ cups long grain white rice
  • pounds boneless, skinless chicken strips
  • 2 tablespoons olive oil
  • 8 corn tortillas
  • 1 medium avocado (sliced)
  • ½ cup salsa
  • ½ cup sour cream
  • 1 medium red bell pepper (diced)
  • ½ medium red onion (diced)
  • 1 cup grape tomatoes (halved)
  • 2 medium jalapenos (sliced)
  • medium lime (juiced)
  • 1 tablespoon chopped fresh cilantro
  • 1 pinch salt

Instructions

  1. Rinse the rice under cold water until clear. In a medium saucepan, combine rice with 3 cups water and a pinch of salt. Bring to a boil; reduce heat and simmer covered for 15-20 minutes until water is absorbed. Fluff with a fork and mix in lime juice and chopped cilantro.
  2. In a mixing bowl, combine olive oil with kosher salt, black pepper, chili powder, garlic powder, and oregano. Add chicken strips and coat evenly.
  3. Grill chicken over medium-high heat for 6-7 minutes per side until cooked through; let rest before slicing.
  4. Grill sweet corn and warm tortillas on the grill.
  5. Assemble bowls with rice as the base topped with sliced chicken, grilled corn, diced vegetables, avocado slices, salsa, sour cream, and fresh cilantro.
