4 boneless chicken thigh fillets
3 tablespoons olive oil
100 ml lime juice (freshly squeezed)
2 cloves garlic (crushed)
2 tablespoons cilantro (chopped)
1 teaspoon brown sugar
3/4 teaspoon red chili flakes
1/2 teaspoon ground cumin
1 teaspoon salt
1/2 yellow bell pepper (sliced)
1/2 red bell pepper (sliced)
1/2 onion (sliced)
5 cups Romaine lettuce
2 avocados (sliced)
1 pinch cilantro (extra to garnish)
1 pinch sour cream (optional – to serve)
Instructions
Whisk together the marinade ingredients: olive oil, lime juice, cilantro, garlic, brown sugar, chili flakes, cumin, and salt.
Marinate the chicken in half of the mixture for at least two hours.
Grill the chicken on medium-high heat until golden brown and cooked through.
Sauté sliced bell peppers and onion until tender.
Assemble the salad with Romaine lettuce, grilled chicken sliced into strips, sautéed veggies, and avocado slices. Drizzle with remaining marinade before serving.
