  • 1 large piece of flank steak (enough marinade for up to 3 pounds)
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 T soy sauce
  • 1/2 tsp ground chipotle chile powder (or your favorite hot sauce)
  • 2 tsp lime zest (optional)

Instructions

  1. In a mixing bowl, combine all marinade ingredients until well blended.
  2. Place the flank steak in a Ziploc bag and pour the marinade over it. Seal tightly and refrigerate for at least 8 hours or up to 24 hours.
  3. About 30 minutes before grilling, remove the steak from the refrigerator to bring it to room temperature.
  4. Preheat your grill to medium-high heat and oil the grates with a paper towel dipped in olive oil.
  5. Grill the flank steak for approximately 4-5 minutes per side for rare to medium rare, or about 6 minutes per side for medium doneness.
  6. Use an instant-read thermometer to check that the steak reaches an internal temperature of 140°F for medium rare or 160°F for medium.
  7. Remove from the grill and let the meat rest for about 5 minutes before slicing against the grain.
