Ingredients

Scale
  • 1.5 lbs salmon fillets (cut into 1-inch squares)
  • 2 large lemons (thinly sliced)
  • 2 Tbsp fresh parsley (chopped)
  • 23 garlic cloves (pressed)
  • 0.5 Tbsp Dijon mustard
  • 0.5 tsp salt
  • 0.125 tsp ground black pepper
  • 2 Tbsp light olive oil
  • 2 Tbsp fresh lemon juice

Instructions

  1. Soak bamboo skewers in water for at least 1 hour to prevent burning. Preheat the grill to medium heat (375°F).
  2. In a medium bowl, mix together parsley, garlic, Dijon mustard, salt, pepper, olive oil, and lemon juice.
  3. Thread salmon pieces and folded lemon slices onto two skewers at a time using the double skewer technique for easy flipping.
  4. Brush both sides of the skewers liberally with the marinade.
  5. Oil the grill grates and place the skewers on the hot grill. Cook for about 3-4 minutes per side until the salmon is cooked through.
