  • 1 can (20 oz) crushed pineapple (with juice)
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • 1 package (8 oz) cream cheese, softened
  • 3 cups powdered sugar
  • 23 tbsp pineapple juice (reserved from the can)
  • 1 cup chopped pecans (optional)
  • 1 cup sweetened shredded coconut (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, whisk together flour, sugar, baking soda, and salt. Stir in eggs, vanilla extract, and crushed pineapple until well combined.
  3. Optionally fold in chopped pecans and shredded coconut. Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  4. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  5. For the frosting, beat softened cream cheese and butter until smooth. Gradually add powdered sugar and mix until fluffy. Stir in vanilla extract and reserved pineapple juice.
  6. Assemble by frosting the top of one cake layer, adding optional garnishes like pineapple tidbits or pecans, then place the second layer on top and frost the entire cake.
