  • 2 leeks, trimmed

  • 1 celery stalk, trimmed

  • ½ inch piece of ginger, peeled
  • 4 bay leaves
  • Handful of fresh parsley, chopped (for garnish)
  • 1 cup fideo noodles or angel hair pasta
  • ¼ teaspoon turmeric
  • 1 teaspoon black peppercorns
  • 1 ½ teaspoons sea salt (adjust to taste)

Instructions

  1. Prepare the vegetables by peeling and trimming them as needed.
  2. In a large pot, combine the chicken, prepared vegetables, bay leaves, turmeric, black peppercorns, and salt. Cover with water and bring to a boil.
  3. Reduce heat to low and simmer for 2 to 4 hours for deeper flavor.
  4. Separate the solids from the broth using a fine mesh strainer; shred the chicken from its bones.
  5. Return chopped vegetables and shredded chicken to the pot. Add noodles and cook according to package instructions until tender.
