  • 1 cup grated zucchini (squeezed dry)

  • 1/4 cup olive oil (or avocado oil)
  • 1/2 cup maple syrup (or honey)
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups whole wheat flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9" x 5" loaf pan with parchment paper or spray it with cooking spray.
  2. In a large bowl, mash the ripe bananas until smooth. Mix in the grated zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt until well combined.
  3. Gently stir in the whole wheat flour until just combined—avoid overmixing.
  4. Pour the batter into the prepared loaf pan and level the top with a spatula.
  5. Bake for about 50–60 minutes or until a toothpick inserted into the center comes out clean.
  6. Let cool in the pan for about 10 minutes before transferring to a cooling rack. Slice once cooled.
