  • Salt & black pepper
  • Garlic powder
  • Butter
  • Fresh garlic, minced
  • Chicken broth
  • Dijon mustard
  • Wholegrain mustard
  • Fresh parsley, chopped
  • Cream
  • Potatoes, peeled
  • Milk or cream
  • Carrots, trimmed
  • Honey or maple syrup

Instructions

  1. Season the chicken with olive oil, garlic powder, salt, and pepper. Sear in a skillet over medium-high heat until golden brown and cooked through.
  2. In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth, both mustards, cream, and parsley; simmer until thickened.
  3. Boil peeled potatoes in salted water until soft. Drain and mash with butter, milk (or cream), salt, and pepper.
  4. In another pan, melt butter and sauté trimmed carrots until tender; drizzle with honey or maple syrup while seasoning with salt and pepper.
  5. Serve the chicken topped with sauce alongside mashed potatoes and glazed carrots.
