  • 4 medium-sized sweet potatoes
  • 1 pound lean ground turkey
  • 1 cup diced canned tomatoes
  • 1 medium zucchini
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1/3 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt, to taste
  • Pepper, to taste
  • 1 cup black beans, rinsed and drained (optional)
  • 1 cup corn kernels, usually frozen (optional)
  • 1 cup cheddar cheese, grated
  • 2 green onions, finely sliced

Instructions

  1. Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork, drizzle with olive oil, sprinkle with salt and pepper, and roast for about 45 minutes until tender.
  2. In a skillet over medium heat, sauté chopped garlic in olive oil until fragrant. Add ground turkey and spices, cooking until browned.
  3. Stir in diced tomatoes, grated zucchini, and optional black beans or corn; season as needed.
  4. Once sweet potatoes are roasted, slice them open without cutting all the way through. Fluff the insides and fill with turkey mixture.
  5. Top with grated cheese and sliced green onions if desired.
