  • 2 lbs boneless chicken thighs
  • 1/2 cup coconut aminos
  • 1/4 cup pineapple juice
  • 1/4 cup tomato paste
  • 46 pitted dates, soaked
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp smoked paprika

Instructions

  1. Soak the pitted dates in warm water for 10-15 minutes to soften.
  2. In a blender, combine coconut aminos, pineapple juice, tomato paste, softened dates, garlic powder, chili powder, and smoked paprika; blend until smooth.
  3. Place chicken thighs in a shallow dish and pour the marinade over them; toss to coat evenly. Cover and refrigerate for at least 30 minutes (up to 24 hours).
  4. Preheat your grill to high heat (about 500°F). Cook marinated chicken for approximately 5-6 minutes on each side while basting with leftover marinade.
