  • 1 cup cooked white rice
  • 1 cup steamed broccoli florets
  • 1 cup cubed butternut squash
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 tbsp olive oil (for roasting squash)
  • Pinch of cinnamon (optional)
  • Fresh parsley, for garnish
  • Lemon wedges

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash cubes with olive oil, salt, and pepper; roast for 25-30 minutes until golden.
  2. In a skillet over medium-high heat, cook cubed chicken in olive oil until golden. Add minced garlic, honey, soy sauce, paprika, salt, and pepper; simmer until well-coated.
  3. Steam broccoli for about 3-4 minutes until bright green and tender.
  4. Assemble bowls with rice at the base topped with roasted squash, steamed broccoli, and honey garlic chicken. Garnish with parsley and serve with lemon wedges.
