  • 1 avocado
  • 1 cup mixed salad greens
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 1 tsp olive oil
  • 1 tsp everything bagel seasoning
  • Salt & black pepper to taste

Instructions

  1. Boil the eggs in water for exactly 7 minutes. Transfer to an ice bath to cool before peeling.
  2. Preheat oven to 425°F (220°C). Toss zucchini and broccoli with olive oil, salt, and pepper in a mixing bowl. Spread on a baking sheet and roast for 15-18 minutes until golden.
  3. In a serving bowl, layer mixed greens, followed by roasted veggies, halved boiled eggs, and sliced avocado.
  4. Top with everything bagel seasoning and garnish with black pepper.
