  • 1¼ Cup buttermilk, room temperature
  • ⅓ Cup granulated sugar (for syrup)
  • ⅓ Cup water
  • 2 Tbsp dried culinary lavender (for syrup)
  • ½ Cup unsalted butter (for frosting)
  • 2⅓ Cups powdered sugar, sifted
  • 2 Tbsp cooled lavender simple syrup
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (177°C) and prepare two 8-inch round cake pans by greasing and lining them with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, dried lavender, and salt. Set aside.
  3. Cream softened butter and sugar in a large bowl until light and fluffy. Add eggs one at a time along with vanilla extract.
  4. Gradually mix in the dry ingredients alternately with buttermilk until just combined.
  5. Pour the batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool before transferring to a wire rack.
  6. While cooling, prepare the lavender simple syrup by simmering sugar, water, and lavender buds until dissolved; let steep then strain.
  7. For the frosting, beat softened butter until creamy, gradually adding sifted powdered sugar and cooled syrup until fluffy.
