  • 1 carrot, peeled and cut into sticks
  • 1 zucchini, sliced into rounds
  • 2 garlic cloves
  • 1 tbsp butter (or olive oil)
  • Juice of 1 lemon
  • Fresh parsley or dill for garnish
  • Salt & black pepper to taste

Instructions

  1. In a non-stick skillet, heat half the butter over medium heat. Add garlic, carrots, and zucchini; sauté for about 6-8 minutes until tender. Season with salt and pepper; set aside.
  2. Season the fish fillet on both sides with salt and pepper. In the same skillet, melt the remaining butter over medium-high heat. Add the fish and sear for 3-4 minutes per side until golden brown and flaky. Drizzle lemon juice over the fish during the last 30 seconds of cooking.
  3. Plate the fish alongside sautéed vegetables, spooning any pan sauce over it. Garnish with fresh herbs.
