  • 1 tablespoon oil
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • ½ teaspoon salt
  • ¼ teaspoon oregano
  • ¼ teaspoon paprika
  • ¼ teaspoon red pepper flakes
  • ½ cup vegetable broth
  • 1 (15 oz) can white beans (drained and rinsed)
  • ¼ cup sun-dried tomatoes (sliced)
  • ½ cup spinach
  • ½ cup heavy cream (plus more as needed)
  • ¼ cup fresh basil (chopped)

Instructions

  1. In a large skillet over medium heat, add the minced onion and oil, cooking until the onion is softened. Add garlic and sauté for about 30 seconds until fragrant.
  2. Stir in tomato paste, salt, oregano, paprika, and red pepper flakes; cook for another 2 minutes.
  3. Add vegetable broth, white beans, and sun-dried tomatoes to the skillet; cook for an additional 4–5 minutes.
  4. Lower the heat and mix in spinach and heavy cream until the spinach wilts down into the mixture.
  5. Garnish with fresh basil before serving warm with toasted bread.
