  • 1/2 cup celery, diced fine
  • 1 1/2 cups vegetable stock
  • 1/4 cup fresh dill, diced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon sea salt (more to taste)

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Add the diced onion and celery along with salt. Sauté for about 4-5 minutes until tender.
  2. Stir in the basmati rice, coating it with the oil and vegetables. Add vegetable stock and lemon juice; mix well.
  3. Bring to a boil then reduce to low heat. Cover tightly and let simmer for 13-15 minutes until liquid is absorbed and rice is tender.
