  • Zest of 1 lemon
  • 34 tablespoons lemon juice

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Sauté the diced onion for 2 minutes, then add minced garlic and cook until fragrant.
  2. Stir in turmeric and salt; mix well.
  3. Add the rice and stir until it becomes slightly translucent.
  4. Pour in broth and water, cover, and bring to a simmer. Reduce heat to low.
  5. Cook for approximately 12 minutes or until liquid is absorbed.
  6. Remove from heat and let sit covered for an additional 10 minutes.
  7. Stir in lemon zest, lemon juice, and chopped parsley before serving.
