  • 1 pound beef tenderloin (or filet mignon, cut into small cubes)
  • 1 tablespoon olive oil
  • 1 cup mushrooms (finely chopped)
  • 2 tablespoons shallots (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh thyme
  • 1 package puff pastry (thawed)
  • 1 egg (beaten, for egg wash)
  • Salt and pepper to taste

Instructions

  1. Sear the seasoned beef in olive oil over medium-high heat for 2-3 minutes on each side until browned. Remove from heat and let cool.
  2. In the same skillet, cook mushrooms, shallots, and garlic until golden brown. Stir in thyme and season with salt and pepper; let cool.
  3. Roll out puff pastry on a floured surface to about 1/8 inch thick and cut into squares measuring 3×3 inches.
  4. Place a spoonful of mushroom mixture on each pastry square, top with beef, then fold over the pastry to seal edges tightly.
  5. Preheat oven to 400°F (200°C), brush each bite with egg wash, and bake for 15-20 minutes until golden brown.
