  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • For the cinnamon swirl: 1/2 cup granulated sugar, 1 Tablespoon cinnamon

  1. Preheat your oven to 350°F (175°C). Line a 9×5 loaf pan with parchment paper.
  2. In a large mixing bowl, combine shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until well mixed.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, and spices (cinnamon, nutmeg, cloves).
  4. Gradually add dry ingredients to the wet mixture; stir gently until combined—do not overmix.
  5. Prepare the cinnamon swirl mixture by combining sugar and cinnamon in a small bowl.
  6. Pour half of the batter into the prepared pan; sprinkle half of the cinnamon mixture on top. Add remaining batter and finish with the rest of the cinnamon swirl mixture.
  7. Use a knife to create a swirl effect through the batter.
  8. Bake for 60–65 minutes or until golden brown; check doneness with a toothpick.
  9. Cool in the pan for 10–15 minutes before transferring to a wire rack.
