  • 1/3 cup white sugar
  • 1 cup dried fruit blend or fruitcake mix
  • 1/2 cup candied mixed peel
  • 1 large egg
  • 1 cup buttermilk or plain yogurt
  • 3/8 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with parchment paper.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, holiday spice mix, and sugar.
  3. In another bowl, lightly beat the egg and combine it with buttermilk (or yogurt) and melted butter.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  5. Fold in dried fruit blend and candied mixed peel.
  6. Divide the batter evenly among muffin cups, filling each about three-quarters full.
  7. Bake for approximately 20 minutes or until golden brown and a toothpick inserted comes out clean.
