  • 2 large chicken breasts
  • 500g baby potatoes, halved
  • 300g fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tbsp olive oil for potatoes
  • 1 tsp dried rosemary
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200C (400F).
  2. Toss halved baby potatoes with olive oil, dried rosemary, salt, and pepper in a bowl. Spread on one side of a baking dish.
  3. Mix chicken breasts with olive oil, garlic powder, paprika, oregano, salt, and pepper until well-coated. Place in the center of the baking dish.
  4. Bake for 20 minutes.
  5. Toss green beans with olive oil, salt, and pepper and add to the baking dish.
  6. Return to the oven for another 20 minutes until the chicken is cooked through (75C/165F) and vegetables are tender.
