  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a medium saucepan over medium heat, warm the olive oil. Add the chopped onion and sauté for 3-4 minutes until soft.
  2. Stir in the minced garlic and cook for another minute, being careful not to burn it.
  3. Add the orzo pasta and stir frequently for about 2 minutes until lightly browned.
  4. Pour in the vegetable broth along with thyme, oregano, salt, and black pepper. Bring to a boil while stirring occasionally.
  5. Reduce the heat to low, cover the saucepan, and simmer for 10-12 minutes until the orzo is tender and most of the broth is absorbed.
  6. Remove from heat and fluff gently with a fork. Mix in fresh parsley before serving.
