Instructions

  1. Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. Cut the zucchinis into 3-inch lengths, then slice into 1/2-inch thick strips. In a mixing bowl, beat eggs with salt and pepper.
  3. On a plate, combine panko breadcrumbs and Parmesan cheese. Dip zucchini strips in the egg mixture, then coat with the breadcrumb mixture.
