  • 1 cup diced onion
  • 1 cup chopped carrot
  • 1 cup chopped celery
  • 4 cloves minced garlic
  • 2 cans diced tomatoes (14.5 oz each)
  • 15 oz tomato sauce
  • 15 oz red kidney beans (drained and rinsed)
  • 15 oz Great Northern beans (drained and rinsed)
  • 2.5 cups V-8 juice
  • 8 ounces dry ditali pasta

Instructions

  1. In a Dutch oven over medium heat, brown the ground beef until fully cooked; drain excess grease.
  2. Add onion, carrot, celery, and garlic; sauté for 5-10 minutes until softened.
  3. Stir in Italian seasoning and basil; cook for another 30 seconds.
  4. Pour in diced tomatoes, tomato sauce, beans, V-8 juice, salt, and pepper; mix well.
  5. Reduce heat to medium-low and cover; simmer for about 50 minutes.
  6. Cook ditali pasta separately until al dente; drain and set aside.
  7. Stir cooked pasta into the soup; cook an additional 5 minutes before serving.
