  • 1 pound lean ground beef
  • 1 1/2 cups chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 3 (8 oz) cans tomato sauce
  • 2 (14.5 oz) cans low-sodium chicken broth
  • 1/2 cup water
  • 1 (15 oz) can diced tomatoes
  • 2 teaspoons granulated sugar
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 3/4 teaspoon dried thyme
  • 1/2 teaspoon dried marjoram
  • Salt and freshly ground black pepper, to taste
  • 1 cup dry ditalini pasta
  • 1 (15 oz) can dark red kidney beans, drained and rinsed
  • 1 (15 oz) can great Northern beans, drained and rinsed
  • 3 tablespoons fresh parsley, minced

Instructions

  1. In a large pot, heat 1 tablespoon olive oil over medium-high heat. Brown the lean ground beef, breaking it apart; drain excess fat.
  2. Add remaining olive oil to the pot, sauté onions, carrots, and celery until soft, then add minced garlic.
  3. Stir in tomato sauce, diced tomatoes, chicken broth, water, sugar, and dried herbs; return beef to the pot and season with salt and pepper.
  4. Bring to a boil then reduce heat; cover and simmer for 15–20 minutes.
  5. Cook ditalini pasta separately until al dente; drain.
  6. Add cooked pasta and drained beans to soup; stir and simmer for an additional 2 minutes.
  7. Finish with minced parsley before serving hot.
