  • 100 ml (⅓ cup + 1½ tbsp) whole milk
  • 20 g (1½ tbsp) unsalted butter, melted
  • 80 g (⅔ cup) all-purpose flour
  • 1 teaspoon baking powder
  • A pinch of fine sea salt
  • Fresh zest of 1 unwaxed lemon
  • 45 medium apples (approx. 750 g/1.65 lbs)
  • Juice of ½ fresh lemon
  • 23 tablespoons powdered sugar for dusting

Instructions

  1. Preheat the oven to 180°C (350°F) and grease your baking dish.
  2. In a mixing bowl, whisk together eggs and sugar until pale and fluffy. Add vanilla extract, milk, and melted butter; mix well.
  3. In another bowl, sift together flour, baking powder, salt, and lemon zest. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Peel and slice apples into thin wedges, tossing them with lemon juice to prevent browning.
  5. Pour half of the batter into the baking dish, layer apple slices on top, then cover with remaining batter.
  6. Bake for 40-45 minutes until golden brown and a toothpick comes out clean.
  7. Allow cooling slightly before dusting with powdered sugar.
