  • 4 to 4 1/2 lbs ripe peaches (about 1418 medium)
  • ½ cup water
  • 4 cups granulated sugar

Instructions

  1. Rinse peaches under cool water and blanch them in boiling water for 30-60 seconds. Transfer to cold water for cooling, then drain.
  2. Peel the peaches by cutting them in half and removing the pits. Discard skin.
  3. Quarter the peeled peaches and place them in a large saucepan with ½ cup of water. Simmer over medium heat until soft.
  4. Blend the mixture into a smooth pulp using a food processor or immersion blender.
  5. Return the peach pulp to the saucepan, add 4 cups of sugar, stirring until dissolved.
  6. Bring to a soft boil, then reduce heat and maintain a low boil while stirring frequently until thickened.
  7. Ladle hot peach butter into sterilized jars, leaving ¼” headspace if canning. Process in a water bath canner for 10 minutes if preserving.
