  • 1 1/2 cups granulated sugar
  • 3/4 cup apple cider vinegar

Instructions

  1. Prepare the pineapple by peeling, coring, and cutting it into small chunks.
  2. In a medium saucepan, combine sugar, apple cider vinegar, red pepper flakes, and ground ginger. Stir well and bring to a gentle boil over medium heat.
  3. Add the diced pineapple to the boiling syrup and reduce the heat to low. Simmer for about 10 minutes while stirring occasionally.
  4. Remove from heat and allow cooling for approximately 30 minutes. If desired, stir in fresh mint leaves.
  5. Transfer the mixture into sterilized jars and seal tightly. Refrigerate for at least 24 hours to let flavors meld before serving.
