  • 1 large room temperature egg
  • ½ tsp vanilla extract
  • 160 g all-purpose flour (1⅓ cups)
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 100 g chocolate (½ cup + 1 tbsp), chopped
  • 45 g crushed pistachios (⅓ cup)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together unsalted butter, light brown sugar, and granulated sugar until creamy. Add pistachio cream, egg, and vanilla extract; mix until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients until just combined.
  4. Gently fold in chopped chocolate and crushed pistachios.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  6. Bake for about 12 minutes or until edges are golden but centers remain soft.
