  • 100 ml strong coffee
  • 200 g savoiardi sponge fingers
  • 300 ml double cream
  • 75 g icing sugar
  • 250 g mascarpone
  • 100 g pistachio cream (plus extra for decoration)
  • Chopped pistachios (for garnish)

Instructions

  1. Whip the double cream and icing sugar in a mixing bowl until soft peaks form. In another bowl, beat together mascarpone and pistachio cream until smooth. Gently fold the mascarpone mixture into the whipped cream until combined.
  2. Pour strong coffee into a shallow dish. Quickly dip each savoiardi sponge finger in the coffee on both sides, then arrange them in a medium-sized serving dish.
  3. Spread a layer of pistachio cream over the sponge fingers, followed by another layer of soaked sponge fingers and remaining cream mixture. Repeat layers and finish with pistachio cream on top.
  4. Decorate by piping additional pistachio paste on top and creating patterns with a toothpick. Cover and chill for at least four hours or overnight.
  5. Serve chilled, garnished with chopped pistachios.
