Ingredients

Scale
  • 1 medium onion, freshly grated
  • 4 medium potatoes, grated and drained well
  • 3 fresh eggs
  • 4 tablespoons all-purpose flour
  • Sea salt and freshly ground black pepper to taste
  • 6 ripe tomatoes, diced
  • 150g fresh mozzarella cheese, shredded
  • Fresh dill, chopped
  • Olive oil for pan-frying

Instructions

  1. Prepare the Batter: In a large mixing bowl, combine the grated onion, potatoes, eggs, salt, pepper, and flour until well mixed.
  2. Cook the Pancakes: Heat olive oil in a non-stick pan over medium heat. Drop spoonfuls of the batter into the pan and cook for about 2 minutes per side until golden brown. Drain on paper towels.
  3. Preheat Oven: While cooking pancakes, preheat your oven to 200°C (400°F).
  4. Assemble: Mix diced tomatoes with half of the mozzarella and dill. Top each pancake with this mixture and sprinkle remaining mozzarella on top before baking for 15 minutes.
  5. Serve Warm: Allow cooling slightly before serving. Garnish with extra dill if desired.
