  • 1 medium leek, thinly sliced
  • 3 garlic cloves, thinly sliced
  • ¼ cup dry white apple vinegar
  • 1 lb baby potatoes, cut into wedges
  • 6 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup shelled peas (fresh or frozen)
  • 2 tsp Worcestershire sauce or soy sauce
  • ¼ cup coarsely chopped dill

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté leeks and garlic until softened.
  2. Add vinegar; cook until nearly evaporated. Stir in potatoes, broth, salt, and pepper; bring to a boil and simmer until potatoes are tender.
  3. Coarsely mash some potatoes with a potato masher. Stir in cream and peas; cook until peas are tender.
  4. Remove from heat; mix in Worcestershire sauce and dill before serving.
