  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • ¼ teaspoon fine salt
  • 1 cup pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • ⅓ cup pure maple syrup or honey
  • ¼ cup unsalted butter or coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 375°F and grease a 9×9-inch baking dish.
  2. In a large bowl, combine rolled oats, pumpkin pie spice, baking powder, and salt.
  3. In another bowl, mix together pumpkin puree, milk, eggs, maple syrup (or honey), melted butter (or coconut oil), and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Transfer the batter to the prepared baking dish and top with additional pecans if desired.
  6. Bake for 30–34 minutes or until set in the center; toothpick should come out clean.
  7. Allow to cool for about 5 minutes before cutting into squares.
