  • ⅔ cup brown sugar
  • ⅔ cup granulated sugar
  • 1 cup applesauce or canola oil
  • 3 eggs (room temperature)
  • 1 tablespoon vanilla extract
  • 1½ cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8×4-inch loaf pans and line with parchment paper.
  2. In a large bowl, whisk together flour, salt, baking powder, baking soda, and pumpkin pie spice.
  3. In another bowl, combine canned pumpkin, brown sugar, granulated sugar, applesauce or oil, eggs, and vanilla extract until smooth.
  4. Mix wet ingredients into dry ingredients until just combined; avoid overmixing.
  5. Gently fold in chocolate chips (reserve some for topping).
  6. Pour batter evenly into prepared pans and bake for 50-55 minutes or until a toothpick comes out clean.
  7. Cool in pans for 10 minutes before transferring to wire racks to cool completely.
