  • 2/3 cup milk (whole, low-fat or skim)
  • 1/2 cup pumpkin puree
  • 1 1/2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 12 slices Texas toast (or French bread, or challah, or croissant halves)
  • 1/2 cup salted or unsalted butter (1 stick), room temperature
  • 1/3 cup pumpkin puree
  • 3 tbsp maple syrup (or honey)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice

Instructions

  1. Heat a large non-stick skillet over medium heat.
  2. In a rectangular baking dish, whisk eggs, milk, pumpkin puree, vanilla extract, cinnamon, and pumpkin pie spice until combined.
  3. Dip each slice of bread into the mixture, making sure both sides are well-coated.
  4. Cook each slice in the skillet for about 2–3 minutes on each side until golden brown.
  5. For the whipped pumpkin butter, beat softened butter with pumpkin puree, maple syrup, vanilla extract, cinnamon, and pumpkin pie spice until fluffy.
