  • 1 ½ cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing or lining it with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until well combined.
  3. Press half of the crumble mixture into the bottom of the prepared dish to form a base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Spread the pumpkin mixture over the crumble base evenly and sprinkle remaining crumble on top (add nuts if desired).
  6. Bake for about 30–35 minutes until golden brown and set. Allow to cool completely before slicing.
