  • 15 oz pumpkin puree
  • 14 oz sweetened condensed milk
  • 2 large eggs
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp nutmeg
  • pinch of all-spice
  • pinch of ground cloves

Instructions

  1. Prepare the crust: Mix flour, salt, and sugar. Cut in cold butter until crumbly. Add cold water gradually until dough forms. Chill for 30 minutes.
  2. Preheat oven to 425°F (220°C).
  3. Make the filling: Combine pumpkin puree, sweetened condensed milk, eggs, salt, and spices in a bowl. Whisk until smooth.
  4. Pour filling into chilled crust.
  5. Bake for 15 minutes at 425°F (220°C), then reduce to 350°F (175°C) and bake for another 35-40 minutes until set.
  6. Cool completely before slicing.
