  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter (melted)
  • 4 (8 oz) packages cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup fresh or frozen blueberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 2 tbsp water
  • Edible silver dust or sprinkles (for decoration)

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of the pan to form the crust.
  3. Bake for 8-10 minutes until lightly golden. Let cool.
  4. In a large bowl, beat together softened cream cheese and sugar until smooth. Add sour cream and vanilla extract; mix until fully combined.
  5. Beat in eggs one at a time, mixing gently until just combined.
  6. In a saucepan over medium heat, combine blueberries, sugar, and lemon juice until blueberries break down. Thicken with cornstarch slurry; let cool slightly.
  7. Pour cheesecake batter over cooled crust; dollop blueberry swirl on top and create swirls using a skewer.
  8. Bake for 50-60 minutes until slightly jiggly but set in the center. Cool in the oven for an hour before transferring to the fridge to chill for at least four hours.
