  • 1/2 tsp garlic powder
  • Salt and black pepper, as desired
  • Flour, for coating
  • 3 tbsp olive oil, plus extra as needed
  • 1 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • 1/2 medium onion, chopped
  • 1 tbsp dijon mustard, or add to taste
  • 1 tbsp vinegar, or to taste
  • 3 cloves garlic, minced
  • 2/3 cup chicken broth
  • 1/2 cup full-fat sour cream

Instructions

  1. Season the chicken breast halves with garlic powder, salt, and black pepper.
  2. Coat each piece lightly with flour on all sides.
  3. In a skillet over medium heat, add 2 tablespoons of olive oil.
  4. Once hot, place the coated chicken breasts in the skillet.
  5. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  6. In the same skillet, add an additional tablespoon of olive oil and butter.
  7. Once melted, add chopped onions and sliced mushrooms.
  8. Sauté until mushrooms are browned and onions are translucent, about 5-6 minutes.
  9. Stir in minced garlic, dijon mustard, and vinegar; cook for another minute.
  10. Pour in chicken broth, scraping any bits off the bottom of the skillet.
  11. Return cooked chicken to the skillet; simmer for about 5 minutes.
  12. Remove from heat; stir in sour cream until well combined.
  13. Adjust seasoning with salt and pepper if necessary.
