  • 1 large head cauliflower (about 45 cups florets)
  • 3 tablespoons olive oil
  • 1 head garlic
  • 1 medium yellow onion, diced
  • 4 cups vegetable broth
  • 1 heaping cup shredded sharp cheddar cheese
  • Freshly ground salt and pepper

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss cauliflower florets with 2 tablespoons olive oil, salt, and pepper on the baking sheet. Prepare garlic by cutting off the top of the head, drizzling with olive oil, wrapping in foil, and placing alongside cauliflower.
  3. Roast both cauliflower and garlic for 30-35 minutes until golden brown.
  4. In a medium pot over medium heat, sauté diced onion in the remaining tablespoon of olive oil until translucent (about 5-8 minutes).
  5. In a blender, combine sautéed onion, roasted cauliflower, roasted garlic (cooled), broth, salt, and pepper. Blend until smooth.
  6. Return blended soup to pot over medium heat. Stir in cheddar cheese and simmer for another 10-15 minutes.
  7. Garnish with sliced green onions and additional cheddar before serving.
