  • 4 garlic cloves (minced)
  • 4 large potatoes (peeled and cubed)
  • 1 head of roasted garlic
  • 1 tablespoon fresh parsley (chopped)
  • 2 tablespoons extra virgin olive oil
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion until softened, about 8 minutes. Add minced garlic and cook for another minute.
  2. Pour in vegetable broth and bring to a boil. Add potato chunks, parsley, pepper, and remaining salt; return to a boil before reducing heat to simmer until potatoes are tender.
  3. Stir in roasted garlic cloves; smash or leave whole as desired.
  4. To thicken the soup, remove 1 cup of cooked potatoes, mash them, then return them to the pot or use an immersion blender for a creamier texture.
  5. Serve hot, garnished with croutons or cheese if desired.
