  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together olive oil, minced garlic, thyme, rosemary, orange zest, orange juice, honey, soy sauce, salt, and pepper.
  3. Place the chicken in a roasting pan and coat with the marinade; let it sit for at least 15 minutes.
  4. Arrange quartered onion around the chicken and pour chicken broth into the pan.
  5. Roast for about 1 hour and 15 minutes or until internal temperature reaches 165°F (75°C).
