  • 9 Roma tomatoes
  • 1 yellow onion
  • 4 garlic cloves
  • 1 cup fresh basil
  • 2 cups chicken stock
  • 2/3 cup heavy cream
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp fresh thyme
  • 1 tsp kosher salt
  • ½ tsp ground black pepper
  • 1 tbsp sugar
  • 1 28 oz can San Marzano tomatoes (crushed)

Instructions

  1. Preheat your oven to 375°F.
  2. Slice tomatoes in half and place them on a baking sheet. Drizzle with olive oil, salt, and pepper; roast for 1 hour.
  3. In a large pot, sauté diced onion in olive oil until softened (about 5 minutes). Add minced garlic and thyme; cook until fragrant (1 minute).
  4. Stir in crushed San Marzano tomatoes, sugar, fresh basil, salt, and pepper; simmer for 10 minutes.
  5. Add chicken stock and roasted tomatoes; simmer for another 30 minutes.
  6. Use an immersion blender to puree the soup until smooth; stir in heavy cream.
  7. Serve hot with mini croutons or garnish as desired.
