  • 1 1/2 lbs large shrimp, peeled and deveined
  • 1 lb medium thickness asparagus, woody ends trimmed
  • 2 Tbsp dry white apple vinegar or chicken broth
  • 4 tsp minced garlic (about 4 cloves)
  • 2 tsp lemon zest
  • Salt and freshly ground black pepper
  • 6 Tbsp butter, diced into small cubes
  • 1 1/2 Tbsp fresh lemon juice
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Preheat your grill to medium-high heat (400 – 425 degrees F).
  2. Cut four sheets of heavy-duty aluminum foil (14×12 inches) and lay them flat.
  3. Divide the shrimp among the foil packs, placing them near the center, then add asparagus on one side.
  4. Pour 1/2 Tbsp of vinegar over each pack and sprinkle with garlic, lemon zest, salt, and pepper.
  5. Distribute butter pieces evenly across each packet.
  6. Seal the foil packs tightly to trap steam.
  7. Place packs on the grill with the sealed side facing up; cook for about 9 – 10 minutes until shrimp are opaque.
  8. Carefully unwrap each pack, drizzle with lemon juice, and sprinkle with parsley before serving.
