  • 2 medium zucchini (cubed)
  • 1 onion (cut into ¾ inch pieces)
  • 1 bell pepper (any color, cut into ¾ inch pieces)
  • 4 fully cooked chicken sausages (sliced into circles)
  • 2 ½ tbsp olive or avocado oil
  • 1 tsp garlic (minced)
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • Fresh basil (for garnish – optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  2. Sauté the sliced chicken sausage until browned; remove from the pan.
  3. Reduce heat to medium and add remaining oil along with zucchini, onion, and bell pepper. Season with spices and stir well.
  4. Cook until the vegetables are tender; return the sausage to the skillet along with minced garlic.
